Chef, it looks like you are using metal tongs on a non-stock pan. Is that what you are doing? Isn't that going to damage the pan?

You're my kitchen super hero! I love the trick about egg white to seal the crust so the custard doesn't soak in and make it soft. What are your thoughts about adding a little cooked American bacon or prosciutto to this? You know, if you have bacon, you get to put it in before the onion !!! 🙂
